To make this you will need…
⚫ Blackberries
🍋🟩 Half a lime
🌿 Rosemary
🫚 Ginger juice (or powdered ginger, depending on how strong you like it)
😋 Spiced rum
🫙 Pomegranate molasses
Here, artistic director Becca tells us how to make this tasty drink…
“Start with a glass and put some ice in it. Pour over half a shot of molasses, half a shot of ginger juice – whizz up some ginger in a blender, use a lump or slices of fresh ginger or use powder, depending on what you have and how strong you like your ginger!
The add a double shot of rum – I used a lovely spiced rum – and half a lime, squeezed! I would then add in a little bit of dark cherry juice or compôte – this sweetens it but keeps that dark, rich, earthy flavour.
Now there’s the downside – it is also a dark, rich earthy colour! So it tastes fantastic, but it looks like a disaster at an allotment!
Instead of putting in pomegranate molasses, which makes it this very muddy colour, my fix for next time would be to use a shot of a red berry liqueur. Pair that with the rum, the ginger, and the lime and mix all that up in a shaker, then put over your waiting ice. Then put a dollop of blackcurrant or blackberry jam in there or even maple syrup!
